40g rolled oats
100g grated zucchini
60g egg whites
½ cup boiling water
2.5g baking powder
60g coconut yogurt
½ @macr0mike blueberry muffin protein bar
10g @macr0mike creamy salted caramel almond butter
Method: 1. In a saucepan, place 40g rolled oats, 100g zucchini (grated), 60g egg whites, stevia, cinnamon with about 1/2 cup of boiling water.
2. Place over a medium heat and whisk continuously for about 2 mins then add 2.5g of baking powder.
3. Continue to keep whisking until the mixture becomes creamy and voluminous.
4. Remove from heat and let the oats sit for about 1 min and then mix 60g coconut yoghurt.
5. Scoop out the oat mixture and place into a bowl.
