Carrot Cake Vanilla Custard Oats

40g rolled oats

8g vanilla custard powder (I used Foster Clark’s brand)

80g egg whites

40g carrot, grated

8g sultanas



60g Vanilla yoghurt

Top with:

10mls sugar free maple syrup

5g @macromike powdered peanut butter

10g light cream cheese


1️. In saucepan, place the rolled oats, vanilla custard powder, egg whites, 3/4 of the grated carrot, sultanas, stevia, cinnamon with about 1/2 cup of water.

2️. Place over a medium heat and whisk continuously until the mixture become nice and creamy.

3️. Remove from heat and mix in the yoghurt.

4️. Scoop out the oat mixture and place into a bowl.

5. In a small bowl mix the maple syrup, powdered PB and cream cheese until combined.

6️. Drizzle over the oats and top with the remaining grated carrot.

7️. Serve and enjoy!
