Cauliflower, pumpkin & Zucchini fritters

Serves 1

Calories 140 C 13g, P 8g, F 7g

Ingredients: 125g Birds Eye frozen cauliflower & pumpkin mash 25g zucchini (grated) 10g wholemeal flour 1 egg Salt/ pepper

Options (not included in total calories) Add in parmesan cheese, corn, carrot as options as well!

Method: 1️. In a bowl mix all of the ingredients until combined.

2️. Heat a non-stick fry pan over medium heat and dollop 2 tablespoons of mixture per fritter into the pan.

3️. Cook the fritters on one side, flip and cook on the other side.

4️. Serve with whatever you want! In my picture is egg white scrambled eggs with veggies, avocado and a garden salad.
