Ingredients: 30g steamed brown rice 130g shredded chicken 50g broccoli, diced 30g red cabbage, sliced 50g kale, sliced 30g Beetroot (golden or red beetroot), grated 15g Craisins 15% less sugar 20g avocado, sliced 10g praise deli-style dijonnaise mayonnaise Salt and pepper ⠀⠀
Method: 1. Prepare the rice as per the package instructions. 2. To make the salad, combine the chicken, broccoli, red cabbage, kale, beetroot, craisins, cooked rice and mayonnaise in a bowl. Toss to combine. 3. Place the sliced avocado on top and garnish with salt and pepper. 4. Serve and enjoy.
