Chocolate and Raspberry Protein Pancakes (Serves 1)
P - 32g, C - 34g, F - 13g
30g rolled oats
20g protein powder (I used peanut butter flavour)
20g coconut flour (or self raising flour)
1 egg (or 100mls egg whites)
2.5g baking powder
Water as needed to make ingredients into a batter consistency
50g vanilla Greek yoghurt (YoPro)
5g chocolate chips (I used Baking Williams baking choc chips) .
1️. In a blender combine the oats, protein powder, flour, egg, baking powder, cinnamon and water to make a batter.
2️. Preheat a non-stick fry pan over a medium heat and dollop 3 tbsp per pancake into the pan.
3️. Cook pancakes on one side and then flip and cook on the other side.
4️. While these pancakes are cooking place the raspberries into a microwaveable bowl and place into the microwave for 20 secs or until runny.
5️. Once pancakes are cooked on a serving plate stack them on top of each other.
6️. Top pancakes with the yoghurt, raspberries and choc chips.
