Creamy carrot cake crumble

1 Fibre One carrot cake bar

YoPro vanilla pouch (145g)

30g light smooth ricotta

8g sultanas

3 marie biscuits, Arnott’s

5g shredded carrot

6g light whipped cream

5g stevia

0.5 tsp cinnamon


1. Crumble the marie biscuits at the bottom of a serving class.

2. In a small bowl, mix the yoghurt, ricotta, stevia, sultanas, 1/2 of the shredded carrot & cinnamon until combined.

3. Place the mixture on top of the Marie biscuits.

4. Crumble the @fibreoneau carrot cake bar over the top.

5. Sprinkle the remaining shredded carrot over the top.

6. Top with the whipped cream and serve.
