Crispy Chicken Caesar Salad

Serves 1 Calories 362 P - 37g, C - 33g, F-10g

Ingredients: 215g low carb potatoes (spud light) 110g chicken breast 7g crispy chicken seasoning (old El Paso) 100g iceberg lettuce 20g baby spinach 215g low carb potatoes (spud light) 1 egg (pre boiled) 12g goats cheese 15g dijonnaise mayonnaise (97% fat free)

Method: 1️. Preheat your oven at 200 degrees and line a baking tray with baking paper. Dice the potatoes into cubes and place them on to the tray and garnish with some salt and pepper. 2️. Place into the oven for 20 minutes or until cooked. 3️. Dice the chicken into cubes and place into a bowl with the chicken seasoning and toss to combine. 4️. Preheat a non stick fry pan over a medium heat and place the chicken into the pan and sauté on both sides until cooked. 5️. To serve, place the lettuce and spinach into a bowl and top with the chicken, boiled egg (sliced), potatoes and the goats cheese. 6️. Squirt the salad with the mayo, garnish with salt and pepper and toss to combine. 7️. Serve
