Ingredients: Omelette: 80g liquid egg whites 7g cacao powder 10g vanilla complete protein 2g cinnamon Chocolate Mousse Filling: 35g avocado 20g coconut yoghurt 20g blueberries 40g strawberries
Top with: 30g coconut yoghurt 15g almond butter 2g organic coconut chips
Method: 1. Mix the egg whites, protein powder and cacao powder together in a pouring jug. 2. Preheat a non-stick frypan over medium heat and pour the egg white mixture into the frypan. Tip the pan on its side to spread the omelette over the bottom of the pan pulling back the edges of the omelette until the mixture is cooked through. 3. Flip the omelette onto the other side and continue cooking for another couple of minutes. Turn off the heat and place omelette onto a serving plate. 4. Mix the avocado & coconut yoghurt in a small bowl until combined. 5. Place the mousse along one side of the omelette and place the blueberries and strawberries on top. 6. Fold the other side of the omelette over the top of the mousse. 7. Place coconut yoghurt, almond butter and coconut chips on top of the omelette. 8. Serve and enjoy!
