Healthy Pumpkin Pie

0.2 tsp pumpkin pie spice

5g stevia

60g banana

5g choc haze super mix, Taylor made treats

51g egg

30g light smooth ricotta

2.5g baking powder

10g natural plant-based protein – cinnamon scroll, Muscle Nation

80g frozen fresh strawberries

60g salted caramel, Yopro

2.7g organic cacao nibs

1 2/7g Golden Gaytime crumbs or crushed nuts

120g pumpkin


1️. Peel and dice the pumpkin and place into a microwavable container (with a vented lid) and cook in the microwave for 2 minutes or until soft.

2️. Place the soft cooked pumpkin, egg, pumpkin spice (or mixed spice), stevia, banana (sliced), choc haze mix (or cacao powder), baking powder, and protein powder into a small bowl.

3️. Blitz with a blender until combined.

4️. Scoop out the mixture and place it into a microwavable bowl.

5️. Place into the microwave for 2-3 minutes or until cooked like a cake consistency.

6️. Top with sliced strawberries, cacao nibs, golden Gaytime crumbs (or crushed nuts), and a dollop of Yopro yoghurt mixed with light ricotta and stevia.

7️. Serve and enjoy!
