Layered Lemon Cheesecake

Calories 246 P - 19g, C - 31g F - 4g Ingredients: 50g creamed cottage cheese 140g vanilla yoghurt 24g marie biscuits 1 tbs lemon zest 10mls lemon juice stevia and cinnamon (to taste) Golden Gaytime Crumbs (or crumble up half of another marie biscuit) Method: 1. To create the cheesecake mixture, place the cottage cheese, yoghurt, lemon juice, 1/2 of the lemon zest, stevia and cinnamon into a small bowl and mix to combine.

2. In a serving glass place 1/3rd of the cheesecake mixture into the bottom of the glass followed by one marie biscuit.

3. Repeat these layers until the last layer is the remaining cheesecake mixture finished over the top.

4. Place in fridge for about 2 hours for the biscuits to soften.

5. Top with a slice of lemon and Golden Gaytime Crumbs (or a crumbled marie biscuit).

5. Serve and enjoy!
