Ingredients 40 rolled oats 10g vanilla protein powder 50mls almond milk (vanilla) 60g egg whites 1/2 tsp baking powder 1/2 tsp lemon juice Cinnamon (to taste) Stevia (to taste) 22g Gullon Sugar Free Twin Cookies (Woolworths health food isle)
20g light smooth ricotta 60g YoPro salted caramel yoghurt 10mls sugar free maple syrup
Method: 1. Place the oats, protein powder, almond milk, egg whites, baking powder, lemon juice, cinnamon, stevia and 1/2 of the twin cookies into a blender and blitz until a smooth consistency. 2. Heat a non-stick fry pan up over a medium heat and place 2tbsp of the batter into the fry pan (per pancake). 3. Cook on one side and then flip and cook on the other side. Keep repeating this until all of the mixture has been used up. 4. Once the pancakes are all cooked, stack the pancakes on top of each other. 5. Mix the ricotta and the yoghurt together in a small bowl and place on top. 6. Crush up and sprinkle of place half a twin cookie into the yoghurt mixture and serve. 7. Drizzle maple syrup over the top and serve.
