Protein Oat Pancakes

Serves 1 Calories 386 P - 16g, F - 13g, C - 52g

Ingredients: 50g rolled oats 30g banana 1/2tsp cinnamon 1/4tsp baking powder 50g liquid egg whites 50mls almond milk

Top with: 50g strawberries 20g blueberries 30g kiwi fruit 10g almond butter 30g coconut yoghurt Stevia (for the snow effect!)

Method: 1. Place the oats, egg whites, cinnamon, banana & baking powder into a blender and blitz for about 15 secs (so the mixture is still a bit chunky). 2. Heat a non-stick frypan over medium heat and spoon 2 tablespoons worth of mixture per pancake into the pan. 3. Cook pancakes on one side until they bubble and then flip and cook on the other side. 4. Sever either stacked or placed side by side.

5. Top with strawberries, kiwi fruit, blueberries, yoghurt and almond butter. 6. Sprinkle stevia over the top and serve! 7. Enjoy my pancakes!!
