Sultana & Walnut Hot Cross Bun Mug Cake

1 free-range egg

70g mashed banana

20g wholemeal self-raising flour

5mls vanilla extract

7g sultanas

10mls sugar-free maple syrup

10 grams crushed walnuts

Pinch of baking powder

Sprinkle of cinnamon

Stevia (to taste)


40g low fat plain Greek yoghurt

40g reduced-fat ricotta

Stevia (to taste)


1. Place an egg into a small ceramic ramekin and whisk it.

2. Add the rest of the ingredients and stir until combined.

3. Place the ramekin into the microwave for 60 secs or until cooked through (like a cake).

4. Whilst the cake is cooking, mix the yoghurt and ricotta in a bowl until combined.

5. To serve, let the cake cool down slightly and then place the ricotta/yoghurt mixture on top of the cake to form a cross.
