Sweet Chilli & Satay Chicken Stir Fry Noodles (serves 1)
Calories 283 (Serves 1) P~34g, C~16g, F~7g Ingredients: 50g noodles (plant based) 80g chicken, diced 50g coleslaw (prepacked) 65g broccoli, diced 50g red capsicum, diced 50g green capsicum, diced 30g baby spinach
Sauce: 6g @macr0mike original peanut butter 12g sweet chilli light sauce 15g less salt soy sauce 2.5g garlic minced
Method: 1. Prepare the noodles as per the instructions on the packet. 2. Preheat a non-stick fry pan over a medium heat and place the diced chicken into the pan. 3. Sauté until nearly cooked. 4. Add in the slaw, broccoli and capsicums. 5. Add in about 120mls water and simmer until the veggies are soft. 6. In a small bowl, mix the peanut butter, chilli sauce, soy sauce & garlic. 7. Place the spinach & sauce into the pan and sauté until the spinach wilts. 8. Add in the fettuccine and mix through the ingredients. 9. Turn the heat off the pan. 10. Place the stir fry into a bowl and serve.
