Tuscan Chicken and Veggie Linguine

Serves 1 Calories 321 P - 33g, C - 38g, F - 5g

Ingredients: 100g chicken mince 50g @celebratehealth Tuscan meatball recipe sauce 10g red onion, diced 40g zucchini, grated 40g carrot, grated 100g cherry tomatoes, diced 90g fresh pasta linguine Fresh parsley 5g shaved parmesan cheese

Method: 1️. Boil a pot of water on the stove and place the pasta into it. Cook this for approximately 6- 8 minutes until cooked. 2️. Heat a non-stick frypan over medium heat and place the mincemeat, sauce, red onion, zucchini, carrot and cherry tomatoes into the pan. 3️. Sauté until the mincemeat is cooked through and the veggies are soft. 4️. Drain the pasta and place it into a serving bowl. 5️. Top the pasta with the mincemeat mixture. 6️. Garnish with fresh parsley and parmesan cheese.

7. Serve and enjoy!
