Zucchini & Egg White Pancakes

Zucchini & Egg White Pancakes (serves 1) Calories 310 P - 35g, C - 31g, F - 4g

Ingredients:

Pancakes: 150g Zucchini, grated 100g egg whites 2.5g baking powder 2g cinnamon 20g rolled oats 15g vanilla protein powder

Top with: 10g @macr0mike peanut butter 10g berry sauce 40g blueberries

Method: 1. Place zucchini, oats, baking powder, cinnamon and protein powder into a blender and blitz until nice and smooth. 2. Preheat a non-stick fry pan over a medium heat and drop 3 tablespoons of mixture into the pan per pancake. 3. Cook them on one side and flip and cook them on the other side. 4. To serve, place them on a serving plate.

5. Top with blueberries, @macr0mike PB, maple syrup, berry sauce and yoghurt.
